Ingredients:
  • 490g (3 1/4 cups) plain flour
  • 3 tsp dried yeast
  • Pinch of salt
  • 250ml (1 cup) milk, warmed
  • 100g Unsalted Butter, melted
  • 3 egg yolks
  • Canola oil, to deep-fry
  • 215g (1 cup) caster sugar, extra
  • 5.00 gm ground cinnamon
Instructions:
  • In a bowl, whisk together flour, sugar, yeast, and salt. Create a well in the center and pour in milk, butter, and egg. Stir until a sticky dough forms.
  • Knead the dough on a generously floured surface until smooth, then transfer it to a greased bowl. Cover and let it rise for 1 1/2 hours, or until doubled in size.
  • Deflate the dough by punching it down, then knead on a lightly floured surface until smooth, about 2 minutes. Roll out the dough to 1cm thickness and let it rest for 2 minutes.
  • Cut out discs using an 8cm round cutter and remove centers using a 3.5cm round cutter. Arrange on a lined tray and let them rest for 15 minutes to rise slightly.
  • Mix the additional sugar and cinnamon on a tray. Fill a large heavy-based saucepan two-thirds full with oil. Heat the oil to 180°C. Deep-fry 4-5 doughnuts for 40 seconds on each side or until they are puffed and golden.
  • Coat the doughnuts in the sugar mixture in batches until all are evenly coated.
