Impress with zesty citrus souffle for a refreshing dessert.
Ingredients:
  • 30g butter
  • 53.75 gm caster sugar
  • 1 lemon rind, finely grated
  • 1 lime rind, finely grated
  • 40.00 ml plain flour
  • 257.50 gm milk, scalded, hot
  • 2 eggs, separated
  • 20.00 ml citrus juice
  • 2 egg whites, extra
  • Icing sugar, for dusting
  • 126.25 gm thickened cream
  • 100g white chocolate, finely chopped
  • 1/2 lemon, finely grated zest
Instructions:
  • Preheat the oven to 200C and lightly grease four 3/4-cup souffle dishes.
  • Combine butter, sugar, and zest in a medium saucepan. Stir over medium heat until melted. Stir in flour and cook for 1 minute. Remove from heat.
  • Pour the hot milk into the butter mixture and whisk until smooth. Put the mixture back on the heat and stir constantly until it boils and thickens. Let it simmer for 1 minute. Mix in the egg yolks and juice, then let it cool slightly.
  • Beat egg whites in a clean bowl until soft peaks form, then gently fold them into the citrus mixture.
  • Divide the mixture evenly among the prepared dishes. Bake until beautifully puffed and golden, for about 15-20 minutes.
  • To prepare the white chocolate sauce, heat cream in a small saucepan over high heat. Remove from heat and stir in the white chocolate and zest until melted.
  • Sprinkle soufflés with icing sugar and serve with a side of decadent white chocolate sauce for drizzling.
