Tangy citrus swordfish with tropical fruit salsa is a delicious choice for a summer barbecue.
Ingredients:
  • 1 medium orange, peeled, sectioned, and cut into bite-size
  • 0.5 cup canned pineapple chunks, undrained
  • 0.25 cup diced fresh mango
  • 2 medium jalapeno peppers, seeded and minced
  • 3 tablespoons orange juice
  • 1 tablespoon diced red bell pepper
  • 2 teaspoons white sugar
  • 1 tablespoon chopped fresh cilantro
  • 0.5 cup fresh orange juice
  • 1 tablespoon olive oil
  • 1 tablespoon pineapple juice concentrate, thawed
  • 0.25 teaspoon cayenne pepper
  • 1.5 pounds swordfish steaks
Instructions:
  • Prepare the vibrant salsa by combining oranges, pineapples, mango, jalapeños, orange juice, bell pepper, sugar, and cilantro in a bowl. Mix well, cover, and chill until ready to serve.
  • Prepare the swordfish marinade by whisking together orange juice, oil, pineapple juice concentrate, and cayenne in a large glass or ceramic bowl. Add the swordfish and coat it thoroughly. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
  • Prepare your outdoor grill by preheating it to medium-high heat and brushing the grate with a light coating of oil.
  • Take the swordfish out of the marinade, gently shaking off any extra. Dispose of the leftover marinade.
  • Grill until the center is opaque, about 6 to 8 minutes per side, then serve with salsa.
