Indulgent cheese sauce complements, not overpowers, vibrant green beans in Chef John's flavorful au gratin casserole.
Ingredients:
  • 1 tablespoon unsalted butter, softened
  • 1.25 pounds fresh green beans
  • kosher salt to taste
  • 2 teaspoons Dijon mustard, or more to taste
  • 1.5 cups heavy cream
  • 2 ounces Comté cheese, grated
  • 2 tablespoons freshly grated Parmigiano-Reggiano cheese
  • 2 tablespoons unsalted butter, melted
  • 0.33333334326744 cup dry bread crumbs
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • Preheat the oven to 450°F (230°C), then generously grease a casserole dish with 1 tablespoon of butter.
  • Bring a pot of heavily salted water to a vigorous boil over high heat.
  • Trim the stems off the beans with a knife or snap them off with your fingers, then cut the beans in half.
  • Add the beans to the boiling water and cook for 5 to 6 minutes until just tender, stirring occasionally and checking for doneness regularly to avoid overcooking.
  • Strain out the beans and promptly submerge them in a cold water bath to halt cooking.
  • After the beans have cooled, simply drain them with your hands and transfer to the casserole, even if they're slightly damp.
  • Season beans generously with black pepper, salt, and zesty Dijon mustard until evenly coated. Add cream, generously sprinkle savory Comté cheese on top, and finish with a generous sprinkle of Parmigiano-Reggiano.
  • Mix melted butter and bread crumbs in a small bowl until the mixture resembles wet sand. Sprinkle over the casserole, then dust with cayenne.
  • Bake in the middle of the oven until golden brown and bubbling, for 15 to 20 minutes.
  • Allow the dish to cool for 10 minutes prior to serving.
