Indulge in a classic tiramisu infused with coffee for a decadent Italian treat. Try this delicious version for a refreshing twist on the original recipe.
Ingredients:
  • 4 eggs, separated
  • 107.50 gm caster sugar
  • 250g mascarpone cheese
  • 82.50 ml coffee liqueur (such as Kahlua)
  • 200ml thickened cream
  • 40.00 ml Instant Coffee Powder
  • 500.00 gm warm water
  • 28 sponge finger biscuits (see note)
  • 10.00 gm cocoa powder
Instructions:
  • In a large bowl, use an electric hand mixer to whisk together egg yolks and sugar until pale and creamy. Next, gently fold in mascarpone and liqueur. Then, wash and dry the beaters, and whip cream to firm peaks before folding it into the mascarpone mixture.
  • Wash and dry beaters thoroughly. Whip egg whites until stiff peaks form. Gently fold into mascarpone mixture. Cover with plastic wrap and chill for 30 minutes before serving.
  • In a shallow dish, mix the coffee and warm water until the coffee dissolves completely. Dip each biscuit one by one in the coffee mixture, making sure to coat them well. Arrange a single layer of the dipped biscuits on the base of a 6cm-deep, 18cm x 28cm (base) baking dish.
  • Layer half of the luscious mascarpone mixture over the biscuits. Next, repeat the layers with the remaining biscuits, coffee, and mascarpone mixture. Cover and let it chill in the refrigerator for 4 hours.
  • Sprinkle the top generously with cocoa powder before serving.
