Enhance pecan pie with shredded coconut for a delightful holiday treat.
Ingredients:
  • 1 (9 inch) unbaked pie crust
  • 0.5 cup butter, melted
  • 3 eggs
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • 1.5 cups white sugar
  • 3.5 ounces flaked coconut
  • 0.5 cup chopped pecans, or as needed
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while you gently press the pie crust into a 9-inch pie dish.
  • In a bowl, combine butter, eggs, lemon juice, and vanilla extract, beating until smooth. Add sugar and mix until well combined. Gently fold in coconut and pecans, then pour mixture into the pie crust.
  • Bake in the preheated oven for 45 to 50 minutes until the pie is perfectly set in the center.
