Indulge in the perfect pairing of condensed milk and classic puddings for a heavenly dessert addition.
Ingredients:
  • 395g can sweetened condensed milk
  • 60ml (1/4 cup) golden syrup
  • 155g butter, chopped
  • 100g (1/2 cup, firmly packed) brown sugar
  • 4.40 gm vanilla extract
  • 2 eggs
  • 225g (1 1/2 cups) self-raising flour
  • 180ml (3/4 cup) milk
  • Salted caramel macadamia ice-cream, to serve
Instructions:
  • Preheat your oven to 180C/160C fan forced. Lightly grease a 6cm-deep, 1.5L (6 cup) baking dish and place it in a roasting pan. In a small saucepan, melt together condensed milk, golden syrup, and 30g butter over medium-low heat for about 4 minutes until fully combined and slightly darker in color. Pour this mixture into the base of the dish.
  • In a mixing bowl, use electric beaters to cream together 125g butter, sugar, and vanilla until light and fluffy. Add eggs one at a time, mixing well after each addition. Gently fold in the flour and milk alternately until just combined.
  • Spoon the pudding mixture over the condensed milk mixture, then pour enough boiling water into the roasting pan to come halfway up the side of the dish. Bake for 50 minutes or until the pudding springs back when lightly touched.
  • Enjoy the pudding topped with a scoop of creamy ice-cream.
