Add a pop of color to your party spread with these vibrant cookies.
Ingredients:
  • 185g butter, softened
  • 161.25 gm caster sugar
  • 4.40 gm vanilla extract
  • 500.00 ml Cake, Biscuit and Pastry plain flour
  • 125.00 ml 100s and 1000s
Instructions:
  • Preheat your oven to 180C/160C fan-forced and line 3 baking trays with baking paper.
  • In an electric mixer, whip butter, sugar, and vanilla until light and fluffy. Incorporate the egg and mix well. Gently sift flour over the mixture, then fold in hundreds and thousands using a wooden spoon until combined.
  • Place the dough on a lightly floured surface and shape it into a 30cm log. Wrap it in plastic wrap and refrigerate for 2 hours, or until firm. Once firm, unwrap the dough and discard the plastic wrap.
  • Slice the ingredients into 1cm-thick rounds, lay them out on baking trays, bake for 12 minutes or until golden, let them cool on the trays for 5 minutes, transfer to a wire rack to cool completely, then serve.
