Coriander and cumin spiced baby carrots

Enhance sweet carrots with earthy cumin, balanced by citrusy coriander for a vibrant twist.
Ingredients:
  • 20.00 ml chopped fresh continental parsley
  • 20.00 ml chopped fresh coriander
  • 2.50 gm ground cumin
  • 4.60 gm olive oil
  • 20.00 ml red wine vinegar
  • 21.00 gm orange juice
  • 3 bunches baby (Dutch) carrots, trimmed, peeled
Instructions:
  • In a small bowl, mix together parsley, coriander, cumin, oil, vinegar, and orange juice.
  • Steam the carrots in a metal steamer over boiling water for 5 minutes until tender, then transfer to a bowl.
  • Toss the salad with the dressing until fully coated, then transfer to a serving bowl and sprinkle with freshly ground pepper before serving.
