Crispy cube steak fried in lard, served with peppery gravy - a quick and delicious 30-minute dinner.
Ingredients:
  • 4 (4 ounce) cube steaks
  • 0.5 teaspoon salt, divided
  • 1.75 teaspoons ground black pepper, divided
  • 2 eggs, lightly beaten
  • 0.25 cup lard
Instructions:
  • Season the steaks generously with a pinch of salt and pepper, allowing the flavors to meld.
  • In a shallow plate, mix flour and 1 teaspoon of pepper. Place beaten eggs in a shallow bowl. Coat seasoned steaks in flour, dip in eggs, and coat with flour again.
  • In a large, heavy skillet over medium-high heat, heat the lard. Fry the steaks in the hot lard until golden brown, about 3 to 4 minutes per side. Place on a paper towel-lined plate to drain.
  • Remove most of the excess fat from the skillet, leaving only 2 tablespoons. Add 2 tablespoons of flour to the fat and stir over medium heat for 1 minute, making sure to scrape up any browned bits from the bottom. Slowly whisk in the milk and continue cooking until the gravy thickens and bubbles, about 3 to 4 minutes. Season with the remaining 1/4 teaspoon of salt and 1/2 teaspoon of pepper; aim for a flavorful, peppery gravy.
