Ingredients:
  • 4 country ribs, about 3 pounds
  • Kosher salt
  • Vegetable oil
  • The barbecue sauce of your choice
Instructions:
  • Prepare the ribs: Cut the country ribs in half for easier handling. Drizzle with oil and generously season with salt to achieve a crispy and flavorful result that will be a hit with your friends.
  • Begin by slow-cooking the ribs for 90 minutes: Choose your preferred cooking method - bake in a 250°F oven, slow-roast in a covered gas grill, smoke on a charcoal grill, or barbecue over wood fire. Let the ribs cook undisturbed. After 90 minutes, turn and baste them with your preferred barbecue sauce like sweet-spicy Dr. Pepper BBQ sauce, South Carolina mustard-based sauce, Bourbon BBQ sauce, or traditional Kansas City-style sauce.
  • Every half an hour, rotate the ribs and brush them with the sauce. Cook for a minimum of 3 hours up to a maximum of 5 hours, depending on the heat level of your fire. The slower the cooking process, the more fat will render out, resulting in tender ribs. Patience is key for the best result.
  • Once the meat starts falling apart, brush the ribs with sauce one more time and transfer them to the hot side of the grill or under the broiler in the oven. Allow the ribs to cook for a minute or two to caramelize the sauce, being careful not to overcook them. A little char is ideal, but avoid turning them into charcoal.
