Upgrade boxed mac and cheese by adding savory ground beef, sweet corn, onions, and zesty tomato sauce for a hearty twist.
Ingredients:
  • 1 (14 ounce) package macaroni and cheese
  • 1 pound extra-lean ground beef
  • 1 small onion, chopped
  • water
  • 1/2 cup milk
  • 1 (10 ounce) can canned whole kernel corn
  • 1 (10 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 3 tablespoons grated Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 450 degrees F (220 degrees C).
  • 1. Boil a large pot of salted water. Cook macaroni until al dente, about 8 minutes, stirring occasionally.
  • Cook the ground beef and onion in a skillet over medium heat until the beef is browned and crumbly, about 7 to 10 minutes. Drain any excess grease.
  • After draining the macaroni without rinsing, toss it back into the pot along with butter, milk, and both packets of cheese sauce mix. Mix until creamy and fully combined.
  • Mix together the macaroni and cheese, ground beef mixture, corn with its liquid, tomato sauce, and tomato paste in a 2-quart casserole dish until well combined.
  • Bake in the preheated oven for 20-25 minutes until heated through, then sprinkle with grated Parmesan cheese.
