Cowboy quesadillas

Make quick and tasty pulled pork and bean quesadillas with simple shortcuts.
Ingredients:
  • 480g pkt Slow Cooked Pork Ready to Pull Shoulder with Apple BBQ Sauce
  • 1 corn cob, husks and silks removed
  • 10 white corn tortillas
  • 400g can black beans, rinsed, drained
  • 2 spring onions, thinly sliced
  • 180g tasty cheese
Instructions:
  • Cook the pork according to the package instructions.
  • Heat up a barbecue grill or chargrill on high. Grill the corn, turning occasionally, for about 8 minutes until it's beautifully charred and tender. Then, use a sharp knife to slice down the side of the corn to remove the kernels.
  • Preheat a sandwich press or a large frying pan over medium heat. Lay out the tortillas on a clean work surface. Fill each tortilla half with pork, corn kernels, black beans, spring onion, and cheddar. Fold in half to seal the delicious filling inside.
  • Cook the quesadillas in batches in a sandwich press for 2-3 minutes or in a frying pan for 1-2 minutes on each side until golden brown and heated through. Transfer to a serving platter.
