Delicious cranberry-oat slice, ideal for snacking or lunchboxes!
Ingredients:
  • 185g plain flour
  • 2 tsp finely grated orange rind
  • 110g brown sugar
  • 135g rolled oats
  • 35g dried cranberry
  • 40g sultana
  • 125g butter, chopped
  • 57.20 gm honey
  • 1.25 gm bicarbonate of soda
  • 40.00 gm boiling water
  • 40.00 ml Flaked Almonds
  • 20.00 ml pepitas (pumpkin seeds)
  • 28.60 gm honey, extra
Instructions:
  • Preheat your oven to 180°C. Grease an 18cm x 28cm slice pan, then line the base and two long sides with baking paper, leaving some overhang.
  • In a large bowl, mix together the flour, orange rind, sugar, oats, cranberries, and sultanas.
  • In a small saucepan over medium heat, melt the butter with the honey while stirring. Once the butter has melted, add the bicarbonate of soda and boiling water, stirring until the mixture bubbles. Remove from heat and set aside until the bubbles settle.
  • Create a well in the flour mixture and add the butter mixture, stirring until fully combined. Press the mixture into the pan, sprinkle with almonds and pepitas, then drizzle extra honey on top. Bake for 25 minutes until golden and firm. Let it cool in the pan before cutting into pieces for serving.
