Sweet potato mash topped with cranberry streusel, featuring natural sweetness with no added sugar.
Ingredients:
  • 6 medium sweet potatoes, peeled
  • 2 tablespoons butter or margarine
  • 1/2 cup soft bread crumbs (1 slice)
  • 1/4 cup dried cranberries
  • 1/4 cup coarsely chopped pecans
  • 2 tablespoons butter or margarine, melted
Instructions:
  • In a 3-quart saucepan, cover sweet potatoes with water. Bring to a boil, then lower heat and simmer covered for 20 to 25 minutes until tender. Drain the sweet potatoes and shake them in the saucepan over low heat to dry.
  • Preheat oven to 350°F. Combine mashed potatoes, 2 tablespoons of butter, and salt until smooth. Transfer mixture to an ungreased 1-quart casserole dish. Mix remaining ingredients and sprinkle over the potatoes.
  • Bake in the oven for around 30 minutes until fully heated and the streusel topping turns a beautiful golden brown.
