Simple and delicious creamed peas and potatoes, perfect for showcasing new potatoes.
Ingredients:
  • 1 pound baby red potatoes, quartered
  • 1 cup shelled English peas
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • salt and pepper to taste
Instructions:
  • In a large pot, cover the potatoes with salted water and bring to a boil. Simmer over medium-low heat until tender, for about 15 to 20 minutes. Drain the potatoes.
  • In a saucepan, bring water to a boil. Add peas and cook until tender, about 6 to 7 minutes. Drain and set aside.
  • In the same saucepan, melt butter over medium heat. Stir in flour to create a thick paste, then gradually whisk in milk, stirring constantly until slightly thickened. Season with salt and pepper. Add potatoes and peas, simmer and stir occasionally until potatoes are heated through, about 5 minutes. Serve hot.
