Creamy Apple-Cinnamon Quesadilla

Savory apple-filled quesadilla, a taste of Mexico in 20 minutes.
Ingredients:
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup reduced-fat cream cheese spread (from 8-oz container)
  • 1 tablespoon packed brown sugar
  • 2 whole wheat tortillas (8 inch)
  • 1/2 small apple, cut into 1/4-inch slices (1/2 cup)
  • Cooking spray
Instructions:
  • Mix together granulated sugar and 1/4 teaspoon of cinnamon in a small bowl; then, in another small bowl, stir together cream cheese, brown sugar, and 1/4 teaspoon cinnamon.
  • Spread the cream cheese mixture evenly over the tortillas. Layer apple slices onto the cream cheese-covered side of one tortilla. Place the second tortilla on top, cream cheese side down. Lightly coat both sides of the quesadilla with cooking spray and sprinkle with the cinnamon-sugar mixture.
  • Preheat a 10-inch nonstick skillet over medium heat. Cook the quesadilla for 2 to 3 minutes until the bottom is golden and crispy. Flip the quesadilla and cook for an additional 2 to 3 minutes until the other side is also golden and crispy.
  • Transfer from the skillet to a cutting board and allow it to rest for 2 to 3 minutes before slicing into 8 wedges.
