Indulge in a rich and comforting cinnamon-infused rice pudding. Perfectly creamy and customizable with or without raisins. A must-try treat that's worth every minute of preparation!
Ingredients:
  • 3 quarts milk
  • 2 tablespoons ground cinnamon
  • 0.25 cup butter
  • 2 cups white sugar
  • 1 cup heavy cream
  • 4 eggs
  • 1 cup uncooked white rice
Instructions:
  • In a large pot, bring together the milk, cinnamon, butter, and rice. Boil, then simmer on low for 30 minutes until rice is tender. Slowly mix in the sugar.
  • Whisk the heavy cream and eggs in a bowl until smooth. Slowly mix in about a cup of the hot milk mixture to raise the temperature. Then gently stir the warmed egg mixture into the pot to prevent scrambling.
  • Cook the pudding over gentle heat for 10 minutes, stirring continuously until it thickens. Transfer the pudding to a baking dish or bowl, and let it cool for 10 to 15 minutes before refrigerating for a minimum of 2 hours prior to serving.
