Indulgent pumpkin herb sauce for cozy fall ravioli.
Ingredients:
  • 2 teaspoons oil
  • 1 shallot, chopped
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup light cream
  • 1 pinch salt
  • 1 pinch ground cinnamon
  • 1 cup pumpkin puree
  • 1 cup chicken broth, or more as needed
  • 1 tablespoon finely chopped fresh sage
  • 1.5 teaspoons chopped fresh thyme
Instructions:
  • In a skillet over medium heat, sauté shallots in oil until soft, about 10 minutes. Add butter and let it melt. Whisk in flour until combined. Then, add cream, salt, and cinnamon, continuing to whisk until everything is well mixed, about 2 minutes.
  • Combine pumpkin and 1/2 cup of chicken broth with the cream mixture. Gradually add more broth, 1/4 cup at a time, until you achieve the desired consistency. Simmer the sauce for 5 to 10 minutes until it thickens to your liking, then stir in the sage and thyme.
