Crispy homemade chicken nuggets coated in rice cereal, perfect for kids. Serve with apricot preserves for a delicious twist.
Ingredients:
  • 1 egg
  • salt and ground black pepper to taste
  • 2.5 cups crispy rice cereal (such as Rice Krispies®), crushed
  • 1.25 pounds skinless, boneless chicken breasts, cut into 20 pieces
  • 0.25 cup extra-virgin olive oil
  • 2 tablespoons butter
  • 0.5 cup apricot preserves
  • 2 tablespoons water
Instructions:
  • In a bowl, whisk together egg, salt, and pepper. Place crushed cereal in another bowl. Dip chicken pieces in the egg mixture, then press into cereal to coat.
  • In a skillet over medium heat, combine oil and butter. Cook and stir chicken until crispy and fully cooked, about 7 minutes.
  • Combine preserves and water in a saucepan and heat over medium-low until smooth and heated through, for about 2 to 3 minutes. Serve the apricot sauce with chicken nuggets.
