Spicy ginger cookies, crispy and addictive, perfect with tea or coffee.
Ingredients:
  • 0.5 cup butter, softened
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 1 teaspoon ground ginger
  • 1 pinch salt
  • 2 cups self-rising flour
  • 1 cup chopped crystallized ginger
  • 2 tablespoons white sugar, or as needed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease 2 baking sheets.
  • In a large bowl, use an electric mixer to beat together 1/2 cup butter, white sugar, and brown sugar until creamy, about 1 to 2 minutes. Mix in egg, ground ginger, and salt. Slowly combine flour until dough forms, about 1 to 2 minutes. Gently fold in chopped crystallized ginger.
  • In a shallow dish, add 2 tablespoons of white sugar. Shape the dough into balls, roll one side in sugar, and press onto the prepared baking sheets.
  • Bake until beautifully golden, for 10-15 minutes in the preheated oven.
