Crispy Parmesan Potato Stacks

Easy-peasy Parmesan garlic potato stacks baked to crispy perfection in a muffin tin!
Ingredients:
  • 2 1/2 tablespoons olive oil
  • 1/8 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1 3/4 pounds Yukon potatoes
  • 1/2 tablespoons fresh thyme leaves
  • 1/4 cup shredded Parmesan cheese
Instructions:
  • Preheat your oven to 375F and prepare a 12-cup muffin pan by greasing it with cooking spray or a light layer of oil. Position the oven rack in the center.
  • Combine fragrant olive oil, aromatic garlic powder, and savory salt in a small bowl; then set it aside.
  • Prepare the potatoes: Wash and scrub the potatoes thoroughly. Slice each potato thinly, aiming for 1/8 to 1/16-inch thickness. A mandoline can help achieve consistent 1/16-inch slices.
  • Create potato stacks by layering 4 potato slices in each muffin cup. Brush with oil mixture, sprinkle with thyme, and repeat layering process to fill each cup. Finish by sprinkling half of the Parmesan on top.
  • Bake the potato stacks in the oven for 30 minutes. Remove from the oven and sprinkle the remaining cheese on top. Continue baking for an additional 5 to 15 minutes until desired level of browning and crispiness is achieved (for a total of 35 to 45 minutes).
  • Serve the potato stacks on plates or a serving dish. Gently lift the stacks from the muffin pan using a spoon. Feel free to add more salt and pepper for extra flavor. Serve hot and crispy right away.
