Crunchy chicken pieces with a herby yoghurt dip

Kid-friendly crispy chicken: Have fun breading with the little ones!
Ingredients:
  • 2 x 200 g skinless chicken breasts
  • 1 x Minty yoghurt dip recipe
  • 1 lemon
  • 2-3 thick slices of bread (roughly 120g)
  • 1 teaspoon sweet smoked paprika
  • sea salt
  • freshly ground black pepper
Instructions:
  • Combine ½ portion of Minty yoghurt dip in a mixing bowl and store the remaining half in the fridge. Slice chicken into 2cm strips, add to the dip, and mix well. Chill in the fridge for 30 minutes. Preheat the oven to 190°C/375°F/gas 5. Grease a baking tray with olive oil. Zest lemon onto a chopping board. Blend bread into crumbs, mix with lemon zest, paprika, salt, and pepper. Coat chicken in breadcrumbs. Bake in the oven for 20-25 minutes, or until golden and fully cooked. Serve with Minty yoghurt dip and tomato salad.
