Crunchy noodle rocky road recipe

A festive twist on a classic rocky road recipe using Chang’s fried noodles, chocolate, marshmallows, raspberry lollies, and coconut. Ready in 45 minutes, this crispy and sweet treat is a perfect Christmas gift.
Ingredients:
  • 360g milk chocolate, chopped
  • 100g pkt Changs original fried noodles
  • 100g (1 2/3 cups) mini pink and white marshmallows
  • 125g (1/2 cup) red raspberry lollies
  • 35g (1/3 cup) desiccated coconut
Instructions:
  • Prepare the 20cm square cake pan by greasing it and lining the base and sides with baking paper, leaving extra paper to hang over two sides.
  • Melt the chocolate gently in a heatproof bowl set over simmering water (ensure no water touches the bowl). It should take about 2-3 minutes to soften. Once done, take the bowl off the pan and stir the chocolate with a metal spoon until smooth. Let it cool slightly.
  • In a large bowl, mix together all ingredients except for a small portion of noodles and coconut to sprinkle on top later. Pour the chocolate mixture over and stir well to coat everything. Transfer to the pan and spread evenly. Sprinkle the reserved noodles and coconut on top. Chill in the refrigerator for 30 minutes until firm.
  • Using parchment paper, carefully lift the rocky road from the pan. Cut into rustic squares. Enjoy immediately or store in an airtight container in the fridge.
