Whip up a quick and delicious dairy-free, egg-free banana crazy cake in just 25 minutes!
Ingredients:
  • 300g (2 cups) plain flour
  • 215g (1 cup) caster sugar
  • 6.00 gm baking powder
  • 80ml (1/3 cup) light tasting olive oil
  • 1 tsp white vinegar
  • 4.40 gm vanilla extract
  • 260.00 gm mashed bananas (about 2 bananas)
  • Vanilla frosting, to serve
  • Caramelised bananas, to serve (see notes)
Instructions:
  • Preheat the oven to 180C (160C fan forced). Grease a 20cm square cake pan and line it with baking paper.
  • Combine flour, sugar, and baking powder in a bowl. Create a well in the center and add oil, vinegar, vanilla, and 250ml (1 cup) water. Gradually whisk until a smooth batter forms, then mix in the banana. Transfer batter to the pan and bake for 17 minutes, or until a skewer inserted in the center comes out clean. Let the cake sit in the pan for 5 minutes before moving to a wire rack to cool completely.
  • Smoothly coat the cake with frosting and adorn it with caramelised bananas.
