Dark Chocolate Cherry Biscotti

Indulgent Dark Chocolate Cherry Biscotti with rich chocolate, juicy cherries, and a tempting vanilla drizzle. Perfect for dipping in coffee or gifting in pretty packages. Treat yourself to these decadent treats!
Ingredients:
  • 2 3/4 cups Gold Medal™ All-Purpose Flour
  • 3 tablespoons Hershey’s™ Special Dark™ Cocoa
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups dark chocolate chips
  • 1 cup chopped dried cherries
  • 2/3 cup white vanilla baking chips
  • 1 teaspoon vegetable shortening
Instructions:
  • Preheat your oven to 350°F and prepare a baking sheet by lining it with cooking parchment paper measuring 18x13 inches.
  • Combine flour, cocoa, baking powder, and salt in a medium bowl.
  • In a large bowl, use an electric mixer to beat butter and sugar until creamy, about 3 minutes. Add eggs and vanilla, mix well. Stir in flour mixture, then add chocolate chips and cherries. Divide dough into thirds on a lightly floured surface. Shape each portion into a 12-inch long log using lightly floured hands. Place logs on a baking sheet, 4 inches apart, and gently press down to flatten to 2 inches wide.
  • Bake for 25 to 30 minutes until just set but slightly soft. Let cool on a wire rack for about an hour. Transfer to a cutting board and cut the logs into 1/2-inch slices using a serrated knife. Place the slices cut side down on large ungreased cookie sheets, spacing them 1/2 inch apart.
  • Bake the cookies for 10 minutes, then flip them over and bake for an additional 5-10 minutes until the tops are dry. Transfer the cookies from the sheet to a cooling rack and let them cool completely for about 30 minutes.
  • 1. Microwave vanilla baking chips and shortening in a small bowl on High for 30-60 seconds, stirring halfway through, until melted and smooth. Transfer the melted mixture to a small resealable plastic bag, then cut a small hole in one corner of the bag. Drizzle the mixture over the biscotti and allow it to set for about 30 minutes.
  • Place in a secure, airtight container.
