Walnut-topped date cookies with optional sweet icing drizzle.
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.25 cup shortening
  • 0.75 cup packed brown sugar
  • 1 egg
  • 0.5 cup sour cream
  • 2.5 cups dates, pitted and chopped
  • 1 cup walnut halves
Instructions:
  • Preheat the oven to a toasty 400 degrees F (205 degrees C) and give two baking sheets a quick greasing.
  • In a bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, mix the shortening and brown sugar until creamy. Add the egg and sour cream, then gradually mix in the flour. Finally, gently fold in the dates.
  • Spoon dough onto baking sheets, spacing 1-1/2 inches apart. Top each cookie with a walnut half in the center.
  • Bake for 8-10 minutes until lightly golden, then cool cookies on wire racks.
