Whip up a tasty frittata in just 25 minutes with eggs, potatoes, peppers, and cheese - perfect for any meal!
Ingredients:
  • 8 eggs
  • 2 tablespoons vegetable oil
  • 1/2 medium green bell pepper, cut into 1-inch strips
  • 1/2 medium red bell pepper, cut into 1-inch strips
  • 1 medium onion, sliced
  • 1 can (1 3/4 oz) shoestring potatoes (1 1/4 cups)
  • 1/2 cup shredded Cheddar cheese (2 oz)
Instructions:
  • In a medium bowl, whisk together eggs and salt until well combined. Set aside. Heat oil in a 12-inch nonstick skillet over medium-high heat. Sauté bell peppers and onion in the hot oil for about 5 minutes until tender, stirring occasionally. Spread the cooked vegetables evenly in the skillet.
  • Gently pour the beaten eggs over the colorful medley of vegetables. Lower the heat and cover the pan, allowing the eggs to cook until they are fully set, about 7 to 9 minutes. Take the pan off the heat once done.
  • Top with a generous layer of tender potatoes and gooey cheese. Cover and allow the irresistible cheese to melt for approximately 2 minutes. Slice into delectable wedges to serve.
