Classic omelette filled with savory ham and peppers.
Ingredients:
  • 1/2 red capsicum, finely chopped
  • 80g shaved honey ham, thinly sliced
  • 4 eggs
  • 20g butter
  • 20.00 ml fresh flat-leaf parsley, chopped
  • Mixed salad, to serve
Instructions:
  • In a medium frying pan over medium heat, warm oil. Add capsicum and ham. Cook for 5 minutes, stirring occasionally, until capsicum softens. Transfer to a bowl and cover to keep warm.
  • Whisk eggs and 2 tablespoons of cold water in a bowl until fully blended. Season with a touch of salt and pepper for a burst of flavor.
  • Warm a medium frying pan over medium-high heat until the butter sizzles when added.
  • Beat eggs once more until well combined. Pour the mixture into the pan and tilt the pan to ensure the eggs evenly cover the base. Use a wooden spoon to gently pull the cooked egg from the outer edge towards the center. Tilt the pan again to allow the uncooked egg to touch the base and continue cooking.
  • Sprinkle omelette with capsicum mixture and fresh parsley, then fold in half to seal the filling. Cut in half, transfer to plates, and accompany with a side salad. Enjoy!
