Healthier apple muffins made with stevia, skim milk, and reduced-calorie margarine for guilt-free indulgence.
Ingredients:
  • vegetable oil cooking spray
  • 1.6666667461395 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 1 tablespoon stevia sugar substitute
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon nutmeg
  • 0.66666668653488 cup skim milk
  • 0.25 cup reduced-calorie margarine, melted
  • 1 cup minced apple
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and give 12 muffin cups a quick spritz with cooking spray.
  • Combine flour, baking powder, stevia, cinnamon, sea salt, and nutmeg in a large bowl. In a separate bowl, whisk together skim milk, egg, and margarine, then add to the flour mixture. Stir until just moistened. Fold minced apple into batter. Spoon into muffin cups and bake.
  • Bake at the perfect temperature until the tops are golden brown, approximately 25 minutes.
