Swap mayo for fat-free sour cream in deviled eggs for a healthier option, added flavor from green onion and Dijon mustard. Perfect for any party.
Ingredients:
  • 6 eggs
  • 3 tablespoons fat-free sour cream
  • 3 tablespoons creamy Dijon mustard
  • 1 medium green onion, finely chopped (1 tablespoon)
  • 1/4 teaspoon seasoned salt
  • Paprika
Instructions:
  • In a 2-quart saucepan, place eggs in a single layer and cover with cold water until 1 inch above the eggs. Bring to a boil, then remove from heat and let stand covered for 20 minutes. Quickly cool the eggs in cold water or ice. Gently crack and roll the eggs to loosen the shell, then peel, starting from the large end.
  • Slice the peeled eggs in half lengthwise and carefully remove the yolks. Transfer the yolks to a small bowl and mash them with a fork. Mix in the sour cream, mustard, onion, and seasoned salt.
  • Spoon egg yolk mixture into the egg white halves, creating a light heap. Dust with paprika, cover, and refrigerate for up to 24 hours.
