Citrus-Dijon baked catfish with caramelized veggies.
Ingredients:
  • 2 pounds catfish fillets
  • 2 tablespoons seasoned salt (such as Season-All®)
  • 1 orange, juiced
  • 1 lemon, juiced
  • 0.5 cup Dijon mustard
  • 1 teaspoon reduced-sodium soy sauce
  • 1 teaspoon Worcestershire sauce
  • 2 dashes hot sauce
  • 2 tablespoons olive oil
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, chopped
Instructions:
  • Preheat oven to 350°F (175°C).
  • Season catfish fillets with a flavorful seasoned salt blend. Combine orange juice, lemon juice, Dijon mustard, soy sauce, Worcestershire sauce, and hot sauce in a bowl for a zesty sauce.
  • Begin by heating olive oil in a large oven-safe skillet until sizzling and fry catfish until golden, about 1 to 2 minutes per side. Coat each fillet with mustard sauce, drizzle remaining sauce over fish, and top with bell pepper, onion, and garlic.
  • Bake in a hot oven until the fish flakes easily with a fork, for 15 to 20 minutes.
