Celebrate autumn's apple bounty with this delicious cake made from foraged wild apples.
Ingredients:
  • 0.5 cup shortening
  • 1 cup white sugar
  • 1 egg
  • 1.5 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 0.75 cup milk
  • 2 apples - peeled, cored and cut into eighths
  • 0.25 cup white sugar
  • 1 teaspoon ground cinnamon
Instructions:
  • Whisk together flour, baking powder, and salt until combined.
  • In a large bowl, whip shortening and 1 cup sugar until light. Mix in egg and vanilla until fluffy. Gradually add sifted ingredients to the mixture, alternating with milk, starting and ending with the sifted ingredients. Pour the batter into a greased 7 x 11 inch baking pan.
  • Arrange the apple pieces neatly on the batter, gently pressing the sharp edges down. Sprinkle with 1/4 cup of sugar and cinnamon.
  • Bake at 350 degrees F (175 degrees C) for 50-60 minutes until the apples are tender and the cake is cooked through.
