Vegan or not, enjoy this quick and delicious kale and tofu soup in minutes!
Ingredients:
  • 4 cups water
  • 2 cubes vegetable bouillon
  • 3 stalks scallions, sliced
  • 3 cups chopped kale
  • 1 cup medium-firm tofu, cubed
Instructions:
  • In a pot, bring water and bouillon to a boil until the cubes have completely dissolved. Then, lower the heat, stir in scallions, and simmer for 30 seconds.
  • Add in the vibrant kale and silky tofu, sauté until the kale reaches your desired tenderness, about 3 to 5 minutes.
