Indulgent Bailey's cheesecake with Irish liqueur filling and graham cracker crust - perfect for celebrating St. Patrick's Day or any special event.
Ingredients:
  • 1 cup graham cracker crumbs
  • 3 tablespoons white sugar
  • 3 tablespoons melted butter
  • 3 (8 ounce) packages cream cheese
  • 1 cup white sugar
  • 2 teaspoons vanilla extract
  • 0.33333334326744 cup Irish cream liqueur
  • 4 eggs
  • 0.25 cup white sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Combine cracker crumbs, 3 tablespoons sugar, and melted butter. Press this tasty mixture into the bottom of a 9-inch springform pan with tall sides. Bake the crust until it turns golden brown, approximately 8 minutes. Let the crust cool on a rack while you keep the oven temperature steady.
  • In a large bowl, use an electric mixer to blend cream cheese, 1 cup sugar, and vanilla until smooth. Mix in 1 cup sour cream and Irish cream liqueur. Gently beat in eggs one at a time until combined. Pour over crust in pan.
  • Bake in the preheated oven until the edges are puffed and the center is set, about 1 to 1 ½ hours. Allow the cheesecake to cool on a rack for 10 minutes while keeping the oven on.
  • In a small bowl, combine 1 cup of sour cream and 1/4 cup of sugar until smooth. Gently press down the edges of the cheesecake, then spread the mixture on top. Bake in a preheated oven for 10 minutes. Allow the cheesecake to cool on a rack.
  • Chill the cheesecake in the refrigerator for 8 hours to overnight.
