Easy Buttermilk Waffles

Delicious buttermilk waffles - crispy outside, tender inside. No mixer needed. Perfect for easy breakfasts - make ahead and freeze.
Ingredients:
  • 2 cups (280g) all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk, well-shaken
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 2 large eggs
  • 1/4 cup melted butter for the waffle iron, optional
Instructions:
  • Preheat the oven to 250°F and place a wire metal cooling rack on top of a baking sheet inside. Alternatively, if preferred, waffles can be toasted directly on the oven rack.
  • Prepare the batter: Combine flour, sugar, baking powder, baking soda, and salt in one bowl. In another bowl, mix buttermilk, melted butter, and eggs. Gradually add the buttermilk mixture to the flour mixture, stirring until no dry flour remains.
  • Allow the batter to relax under a clean kitchen towel for at least five minutes while you preheat the waffle iron. It's time to start cooking when a drop of water sizzles as it touches the griddle.
  • Prepare the waffle iron by brushing it with melted butter for a golden color and to prevent sticking. Then, add 1/3 to 1/2 cup of batter into each waffle grid and cook until golden following the waffle iron's instructions.
  • Once the waffles are cooked, move them to the oven on a cooling rack placed on a baking sheet. Arrange them in a single layer to ensure they crisp evenly on both sides and no steam is trapped. Toast for 5 to 10 minutes.
  • Bake the remaining waffles in the oven as they finish cooking, stacking them as needed to make space for the next batches.
  • Serve the waffles: Enjoy the waffles while they are hot and crispy. Store any extras in the refrigerator for up to a week or in the freezer for up to 3 months. Simply reheat in the toaster for a quick and delicious treat.
