Delicate oat sandwich cookies with creamy milk chocolate filling for an ultimate treat.
Ingredients:
  • 0.66666668653488 cup butter
  • 2 cups quick-cooking oats
  • 0.66666668653488 cup all-purpose flour
  • 0.25 cup corn syrup
  • 0.25 cup milk
  • 1 cup semisweet chocolate chips (such as Nestle® Toll House®)
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and line 2 cookie sheets with aluminum foil.
  • 1. In a large saucepan, melt the butter until smooth. Take it off the heat and stir in oats, sugar, flour, corn syrup, milk, vanilla, and salt until fully blended. Spoon the mixture onto the cookie sheets, spacing them 3 inches apart. Use a rubber spatula to flatten the cookies into a thin layer.
  • Bake in the preheated oven for 5 to 7 minutes until golden brown, then cool on the cookie sheets.
  • In a double boiler set over simmering water, melt chocolate chips, stirring often and using a rubber spatula to scrape down the sides, until smooth and melted, about 5 minutes.
  • Unwrap the foil from the cookies. Coat half of them with luscious melted chocolate, then sandwich them with the rest of the cookies.
