Whip up a simple and refreshing fruit dessert using common ingredients!
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1/3 cup sugar
  • 1/3 cup butter or margarine, softened
  • 1 egg
  • 1 package (3 oz) cream cheese, softened
  • 1 teaspoon vanilla
  • 3/4 cup whipping cream
  • 4 cups assorted fresh fruits (such as strawberry halves, blueberries, raspberries, blackberries, kiwifruit slices)
  • 1/2 cup apple jelly, melted
Instructions:
  • Preheat the oven to 375°F. Coat a cookie sheet with cooking spray and sprinkle with Bisquick mix. In a medium bowl, combine Bisquick mix and 1/3 cup of sugar. Use a pastry blender or two knives to cut in butter until the mixture is crumbly. Stir in the egg until a soft dough comes together. Press the dough into a 12x10-inch rectangle on the prepared cookie sheet, pinching the edges to form a 1/2-inch rim.
  • Bake for 10 to 12 minutes until edges just start to brown. Then, let the crust cool on the cookie sheet on a wire rack for 2 minutes before transferring it to a cooling rack. Allow the crust to cool completely, approximately 30 minutes.
  • In a small bowl, cream together cream cheese, 1/3 cup sugar, and vanilla using an electric mixer until smooth. Gradually add whipping cream and beat on medium speed until stiff peaks form. Spread the mixture over the crust leaving a 1/4 inch border. Arrange fruits on top, brush with jelly, then refrigerate for at least 2 hours. Store covered in the refrigerator.
