Indulge in gluten-free cinnamon rolls made with bread mix, baked with cream, and topped with a sweet glaze.
Ingredients:
  • 1.75 cups warm water (110 degrees F/45 degrees C)
  • 1 (20 ounce) package gluten-free bread flour mix (such as Bob's Red Mill®)
  • 2 eggs, at room temperature
  • 0.25 cup vegetable oil
  • 1 teaspoon cider vinegar
  • 2 tablespoons melted butter
  • 1 cup white sugar
  • 1 teaspoon ground cinnamon
  • 0.5 cup heavy whipping cream
  • 1 cup confectioners' sugar
  • 1 tablespoon milk
Instructions:
  • Combine the warm water and yeast packet from the bread mix in a bowl. Allow it to sit until foamy, approximately 5 minutes.
  • In the bowl of a stand mixer, combine bread flour mix with eggs, vegetable oil, vinegar, and yeast mixture. Mix on low speed until smooth, then increase the speed to medium and beat for about 15 seconds until thickened. Transfer the dough to a greased bowl, cover with a dish, and let it rise in a warm place for 45 minutes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Lay dough on plastic wrap. Brush with melted butter, then sprinkle with white sugar and cinnamon.
  • Shape the dough into a jelly roll-style loaf by lifting one end of the plastic wrap and rolling the dough. Transfer the roll into a glass baking dish, then make 1/2 to 1-inch slits on the loaf. Pour cream over the loaf.
  • Bake in the oven until the dough is fully cooked, for about 20 to 30 minutes. Then, gently break the rolls apart.
  • Combine confectioners' sugar and milk in a bowl until the glaze is smooth, then drizzle it over warm rolls.
