Effortless weeknight meal: Chicken tray bake with drumsticks, feta, tomatoes, and olives.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 1.5kg (about 9) chicken drumsticks
  • 2 red capsicums, deseeded, thickly sliced
  • 1 red onion, cut into thick wedges
  • 6 sprigs fresh oregano
  • 3 fresh or dried bay leaves
  • 42.00 gm fresh lemon juice, plus wedges to serve
  • 200g punnet cherry tomatoes
  • 100g (3/4 cup) Sicilian olives, pitted
  • 125g feta, broken into large pieces
Instructions:
  • Preheat your oven to 200C/180C fan forced. Drizzle 1 tablespoon of oil into a large baking dish and let it heat up in the oven for 5 minutes.
  • Place the chicken in the baking dish, making sure to coat it well. Surround the chicken with capsicum, onion, garlic, oregano, and bay leaves. Drizzle with lemon juice and the remaining oil, then season with salt and pepper. Bake for 30 minutes or until the chicken is golden brown.
  • Top the dish with tomatoes and olives. Bake for an additional 15 minutes or until the chicken is golden and tender. Finish by adding feta on top and serving with lemon wedges.
