Elevate your outdoor dining with these grilled peppers, a simple and tasty side dish for any BBQ.
Ingredients:
  • Vegetable oil, for the grill
  • 4 large sweet bell peppers (any color)
  • 1/4 cup olive oil
  • 1 teaspoon kosher salt
  • To serve
  • Olive oil
  • Red wine or balsamic vinegar
  • Kosher salt, to taste
Instructions:
  • Prepare grill by lighting charcoal or setting gas to medium-high heat. Use oiled paper towel to brush grill grates.
  • Prepare the peppers: Halve the peppers from top to bottom and remove the stems and seeds. Flatten each pepper with your hand; if it breaks into quarters, that's fine. The pieces are large enough to grill without worrying about them falling through the grates.
  • Coat peppers in a blend of olive oil and salt: Place peppers in a bowl and gently toss with olive oil and salt.
  • Grill the peppers by placing them skin side down on oiled grill grates. Cook for 6 to 8 minutes until skins are wrinkled and blackened. The darker the skins, the easier they are to peel and they become more charred in color. Flip the peppers and grill for an additional 3 to 4 minutes until softened.
  • Using tongs, place the peppers in a bowl and cover with a plate to steam for about 10 minutes until they cool down.
  • Peel the peppers by pulling off and discarding the skins with your fingers. Avoid rinsing them under water to preserve their smoky sweet flavor. You can fill a bowl with water to rinse your fingers as needed while removing stubborn bits with the dull end of a paring knife.
  • To finish and serve: Arrange the peppers on a platter, then generously drizzle with olive oil and vinegar. Season with salt to enhance the flavors. Serve immediately.
