Easy Italian Artichoke-Bacon Pie

Satisfy six with a delicious, cheesy pie featuring Bisquick®, bacon, tomatoes, and artichokes - a taste of Italy!
Ingredients:
  • 1 cup shredded mozzarella cheese (4 oz)
  • 12 slices bacon, crisply cooked, crumbled (3/4 cup)
  • 1/4 cup chopped sun-dried tomatoes in olive oil, drained
  • 1/4 cup creamy Italian dressing
  • 1 jar (6 oz) marinated artichoke hearts, drained, chopped
  • 1/2 cup Original Bisquick™ mix
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1 cup milk
  • 2 eggs
Instructions:
  • Preheat the oven to 400°F and generously coat a 9-inch glass pie plate with cooking spray.
  • Combine mozzarella cheese, bacon, sun-dried tomatoes, dressing, and artichokes in a large bowl, then evenly spread the mixture in a pie plate.
  • In a medium bowl, whisk together the remaining ingredients until smooth. Pour the mixture over the ingredients in the pie plate.
  • Bake for 25-30 minutes until golden brown and a knife inserted in the center comes out clean. Allow it to stand for 5 minutes before serving.
