Quick and easy pecan bars with a cake mix crust that taste like pecan pie.
Ingredients:
  • 1 (18.25 ounce) package yellow cake mix, divided
  • 0.25 cup butter, softened
  • 1 egg, lightly beaten
  • 0.75 cup packed brown sugar
  • 0.75 cup dark corn syrup
  • 1.25 cups coarsely chopped pecans
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and give your 9x13-inch cake pan a gentle greasing.
  • Reserve 1 cup of the cake mix for the filling.
  • Combine the rest of the cake mix, butter, and 1 lightly beaten egg in a bowl until crumbly, then press into the prepared pan.
  • Bake in the oven until the crust is golden brown, approximately 12 minutes.
  • In a bowl, mix together brown sugar, corn syrup, 3 eggs, and vanilla extract. Add 1 cup of reserved cake mix and stir until fully combined. Spread the mixture evenly over the crust and sprinkle with pecans. Enjoy!
  • Bake in the preheated oven for 25-30 minutes, or until the filling is set when gently shaken. Allow to cool completely before cutting into bars.
