Indulge in pecan pie cupcakes for a tasty twist on a classic dessert.
Ingredients:
  • cooking spray with flour
  • 1 cup chopped pecans
  • 1 cup packed brown sugar
  • 0.5 cup whole wheat flour
  • 0.66666668653488 cup melted butter
  • 2 eggs, beaten
  • 24 whole pecans
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a non-stick mini-muffin pan with floured cooking spray.
  • Combine chopped pecans, brown sugar, flour, melted butter, and eggs in a bowl. Fill muffin cups with the pecan mixture and top each with a whole pecan in the center.
  • Bake in the preheated oven for 18 minutes or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool completely on a wire rack for about 1 hour.
