Easy pork gumbo

Gumbo: A simple and delicious one-pot dish.
Ingredients:
  • 36.80 gm rice bran oil
  • 6 thin pork sausages
  • 1 small brown onion, finely chopped
  • 1 medium yellow capsicum, finely chopped
  • 2 celery stalks, thinly sliced
  • 2.50 gm smoked paprika
  • 1/4 tsp cayenne pepper
  • 382.50 gm chicken style liquid stock
  • 44.40 gm tomato paste
  • 400g can diced tomatoes
  • 450g packet long-grain white rice in 2 1/2 minutes
  • 187.50 ml frozen peas
Instructions:
  • In a large, deep frying pan over medium heat, heat half of the oil. Add sausages and cook, turning occasionally, for 6 to 8 minutes until they are cooked through. Transfer sausages to a plate and cut them into 3cm pieces.
  • In a pan over medium heat, heat the remaining oil. Add onion, capsicum, celery, and garlic. Cook and stir for 5 minutes until the onion softens. Then add flour, paprika, and cayenne pepper. Stir and cook for 1 minute. Gradually add stock, followed by tomato paste and tomatoes. Bring to a boil, then reduce heat to low. Simmer uncovered for 5 minutes until thickened.
  • Stir in rice and cook for 5 minutes, then add peas and sausage. Continue to cook for 6 to 8 minutes until liquid is absorbed. Serve hot.
