Quick and delicious one-pan shrimp fried rice, a comforting meal loved by all in under 30 minutes!
Ingredients:
  • 2 tablespoons sesame oil
  • 2 tablespoons olive oil
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 cup frozen peas and carrots
  • 0.5 cup frozen corn
  • 2 cloves garlic, finely minced, or more to taste
  • 3 large eggs, lightly beaten
  • 4 cups cooked rice
  • 3 tablespoons thinly sliced green onions
  • 3 tablespoons low-sodium soy sauce, or more to taste
  • 0.5 teaspoon salt, or to taste
  • 0.5 teaspoon freshly ground black pepper, or to taste
Instructions:
  • In a large nonstick skillet or wok over medium-high heat, heat the sesame oil and olive oil. Cook shrimp until bright pink on the outside and the meat is opaque, about 3 minutes, flipping halfway through.
  • Using a slotted spoon, transfer the shrimp from the skillet to a plate, leaving the flavorful oils and juices behind in the skillet. Set the shrimp aside for later.
  • Into the skillet, toss in peas, carrots, and corn. Sauté until veggies start to soften, approximately 2 minutes. Introduce garlic to the mix, sauté for another minute. Create space in the skillet for the eggs. Scramble them, stirring occasionally, for 3 to 4 minutes.
  • Combine shrimp, rice, and green onions in the skillet. Drizzle with soy sauce, sprinkle with salt and pepper, and stir well. Cook until shrimp is heated through, approximately 2 minutes.
