Try this quick and delicious Frozen Corn skillet jambalaya for a classic dinner in just 35 minutes.
Ingredients:
  • 1 tablespoon olive oil
  • 1 cup frozen bell pepper and onion stir-fry
  • 1 cup frozen corn
  • 1 (8-oz.) pkg. red beans and rice mix
  • Water
  • 1 (12-oz.) can luncheon meat, drained, cut into 1/2-inch cubes
  • 2 Italian plum tomatoes, chopped
Instructions:
  • In a large skillet, heat oil over medium heat until hot. Add bell pepper and onion stir-fry and cook and stir for 2 minutes until crisp-tender.
  • Combine the corn, beans, and rice mix in a pot with the specified amount of water indicated on the packaging. Allow the mixture to come to a boil, then lower the heat, cover, and simmer for 10 to 15 minutes, stirring occasionally.
  • Gently mix in luncheon meat and tomatoes. Cook for 3 to 5 minutes until rice is tender, stirring occasionally. Optionally, top with chopped fresh parsley for a finishing touch.
