Cheesy zucchini fritters: Easy, crispy, golden bites packed with veggie goodness!
Ingredients:
  • 1.5 pounds zucchini, grated
  • 0.75 teaspoon salt
  • 0.25 cup all-purpose flour
  • 0.25 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 2 cloves garlic, minced
  • kosher salt and ground black pepper to taste
Instructions:
  • Combine zucchini and salt in a large colander and let it drain in the sink for 10 minutes.
  • Wrap the zucchini in cheesecloth and press to remove excess moisture.
  • Combine the flour, grated Parmesan cheese, egg, and minced garlic in a spacious bowl. Add the zucchini and mix well. Season generously with kosher salt and freshly ground black pepper.
  • In a large skillet, warm the olive oil over medium-high heat.
  • In batches, spoon zucchini mixture into the skillet and fry until golden brown on each side, about 2 minutes per side.
  • Enjoy while warm and savor every bite!
