Extra-Easy Grilled Pepperoni Pizza

Easy, delicious grilled pizza with flavorful Italian seasoning crust - a perfect summer meal!
Ingredients:
  • 2 1/2 cups Original Bisquick™ mix
  • 1 teaspoon Italian seasoning
  • 1/2 cup very hot water
  • 1/3 cup pizza sauce (from 14 oz jar)
  • 1/2 package (3.5 oz) sliced pepperoni (about 24 slices)
  • 1/2 cup sliced fresh mushrooms
  • 1/2 cup chopped red or green bell pepper
  • 1 1/2 cups shredded mozzarella cheese (6 oz)
  • Sliced fresh basil or chopped fresh parsley, if desired
Instructions:
  • Preheat a gas or charcoal grill for indirect cooking at medium heat. Thoroughly coat an 18x18-inch piece of heavy-duty foil with cooking spray.
  • Gently scoop Bisquick mix into a measuring cup and level it off. Combine all crust ingredients in a medium bowl until just moistened. Lightly knead the dough in the bowl about 10 times. Transfer the dough onto greased foil and press it into a 12-inch round shape, starting from the center. Place the crust on a large cookie sheet for easy transport to the grill. Grill the crust foil side down, covered, for 1 to 3 minutes until the bottom is lightly golden brown. Be careful not to overcook. Remove the crust from the grill and place it back on the cookie sheet.
  • Spread the sauce over the dough, leaving a 1/2-inch border. Evenly distribute the remaining ingredients on top (avoid making the center too thick). Place the pizza on the grill with the foil side down. Cook covered for 8 to 10 minutes until the crust is golden brown and the cheese is melted. Gently transfer to a cookie sheet and sprinkle with basil.
