Family-friendly dessert sushi: a delightful fusion of fairy bread and chocolate crackles in one irresistible treat!
Ingredients:
  • 105g (3 cups) rice bubbles
  • 120g (2 cups) pink and white marshmallows
  • 50g butter
  • 180g white chocolate, chopped
  • 40g (1/3 cup) magic star tops sprinkles
  • 20g (1/3 cup) mini marshmallows
Instructions:
  • Prepare a 24cm x 33.5cm baking tray by greasing it and lining the base and sides with baking paper, extending it 5cm above the edges. Spread sprinkles evenly over the base of the tray, then transfer rice bubbles to a heatproof bowl.
  • In a saucepan over medium heat, combine marshmallows and butter. Cook for 8-10 minutes until melted and smooth, stirring occasionally. Stir in rice bubbles until well combined. Quickly transfer mixture onto a prepared tray and use damp hands to press it evenly to cover the base of the pan.
  • Melt white chocolate in the microwave until smooth, then let it cool for 2 minutes. Spread over rice bubbles, leaving a 1cm border, and allow it to set for 5 minutes.
  • Carefully lift the mixture from the pan onto a sheet of parchment paper. Place mini marshmallows along one long side. Roll the mixture tightly from that side to form a log, using the parchment paper to assist you. Wrap the log in the parchment paper and refrigerate for 2 hours or until firm.
  • Trim the ends off the roll and slice into 1cm thick pieces. Serve at room temperature.
